From the Wairau Valley in Marlborough, perfectly ripened fruit is handled carefully to preserve the delicate aromas, fruit purity and freshness. Nashi pear and Golden Queen peaches are complimented by subtle fermentation characters of grilled nectarine and custard. Following fermentation, some time on yeast lees contributes creamy texture but also inviting bread and baked apple flavours.
