Dalwhinnie has a little bit of everything, peat, honey and backbone. A classic malt for everyone. A wholemeal and honey quality to the nose and the odd smoky tangent. A sweet, fruity core and a long round finish. Some of Dalwhinnie's complexity is from the water, sourced from Allt an t'Sluie Burn, some is from the traditional worms and the two stills and yet I feel sure that the altitude and weather must also play their part. The young spirit is aged in Ex-Bourbon casks for 15 years before bottling. Alcohol Vol 43% Whiskey Range

He used the charred casks regardless and found they imparted a lovely character. This is a great 12 year old small batch bourbon, named in his honour. Tasting Note Nose: Quite thick and full. There is a beautiful sweetness with notes of toasty oak, toffee, spicy stewed fruits, a touch of resin and a lovely crème anglaise character. Palate: Full and sublimely smooth with notes if stewed Bramley apples, malmsey, a touch of aniseed and a hint of spice. Finish: Good length with toasty oak notes and a creamy sweetness." Alc 47%
